4 Let cool completely in the broth, placing the pot in the refrigerator once the broth stops steaming. You can transfer the seitan cutlets and broth to an airtight container and store in the refrigerator until ready to use.
5 Bread and fry the seitan chops: On a large dinner plate, mix together the panko, rosemary, salt, and pepper. Have ready a piece of parchment. Preheat a large cast-iron pan over medium heat.
6 Working one by one, remove each cooled cutlet from the broth, but donât shake the broth off. Press each side firmly into the breadcrumb mixture to coat. It wonât be fully coated like fried chicken, but rather a light, imperfect breading. Place on the parchment until ready to fry.
7 You want a nice layer of olive oil in the pan, somewhere between â and ¼ inch. In two batches, pan-fry the chops for about 5 minutes on each side until golden, flipping occasionally.
8 The cutlets are ready to eat! Serve with a healthy amount of mashed sweet potatoes topped with plenty of applesauce, if you like.
